To know a culture, you have to start in the kitchen. In our cooking classes, locals impart their knowledge of Ecuadorian cuisine—a fusion of traditional ingredients, colonial Spain, and Andean fare. Cuenca’s privileged location—nestled high in the Andes but near the Pacific—offers a rare opportunity for culinary innovation. Begin by visiting the lively local market to pick up some fresh ingredients, which is an important part of the day for the people of Cuenca. Then, learn how to rustle up some exquisite Ecuadorian culinary creations with what you find.

La Ruta del Carbón

This tour combines a hike along the route known as La Ruta del Carbón, named after the kilns still used by local people to produce charcoal, sightseeing as we go to some of the most beautiful vineyards and estates in Chile’s central valley area. The versatility of this hike will allow you to walk 2 to 9 mile routes according to your or your clients’ specific interests/requirements. There are incredible views of many famous wineries along La Ruta del Carbon, and after our hike, we can partake in winemaking lessons, wine tasting sessions and sampling of some of the most impressive premium wines produced from these estates. Black Ceramics Shop and Classes

One of the most authentic experiences in Cuenca is a visit to the Encalada Family Ceramic Shop. The owner, Jose Encalada and his four sons, have spent their lives creating a diverse variety of traditional style pottery, based on a unique technique called the “Black Ceramic”. Considered the only black ceramic shop in Ecuador, numerous ceramic designs of varying shapes and sizes are exhibited throughout the shop. The entire process is as unique as it is intriguing, combining many delicate processes and culminating in the creation of a ceramic masterpiece. After watching the entire process, we will be invited to create our own piece of art with the unique black ceramic.

Tinguiririca River and Viña Casa Silva

This route follows the course of the Tinguiririca River. The hike will pass through arid deserts, which suddenly become verdant forests overlooked by mysterious mountains. The vineyards in this area are owned by the Casa Silva family who has been in the wine business for five generations. Casa Silva wines are sold in over 50 different countries and this vineyard is reputed to be the best Carménère producer in Chile. Stretching from the foothills of the Andes to the Pacific Ocean, Casa Silva produces a range of subtle varietals and highly individualised wines.

Cojitambo School Visit

The village of Cojitambo is located 25 km north of Cuenca at 9800 feet (3000 meters) above sea level, with a population of 3500 inhabitants. This beautiful little town, nestled in the foothills of Cojitambo Hill, is home to the elementary school, “Dr. Angel Enrique Montalvo”. In this small public school, there are approximately 70 - 80 students ranging from first to seventh grade, all educated by eight teachers. During the visit, we will exchange stories with local kids and faculty, related to the similarities and differences between the school systems. This is important feedback and helpful in improving the conditions of the school. We will conclude our visit with a fun activity such as a competition, a dance, or a quick soccer match.

Walking and Wine Tasting in Viña Montes

This is a unique hike through the Viña Montes area, renowned for its ‘first growth’ wines, combined with a visit to a new winery in Apalta which uses advanced sophisticated gravitational winemaking technologies. The walk includes a spectacular tour of the steep hillsides, where the native and endemic plants have been marked/labelled making this an unmissable botanic trail for plant lovers. The views from the vineyards’ hillsides are magnificent as they magically seem to cling to gradients of over 45 degrees, producing popular and superbly named wines such as Montes Alpha Cabernet Sauvignon, Montes Folly and Purple Angel! Lunch will be served at Viña Montes and will be followed by a exceptional wine tour.

Cuenca City Tour

Cuenca is a beautifully preserved colonial city nestled in the lush hillsides of the Andes. The ‘Canal Route’ and Wine Making at MontGrass

The ‘Canal Route’ provides incredible views of the Andes and, from across a spectacular valley, the MontGras, Bisquertt, and Siegel wineries, famous for the hospitality of the local people who will offer you a local drink called Chicha de Uva, made from fermented grapes. MontGras winery is one of the most modern wine making facilities in the world and it produces the best premium wine in all Chile, as evidenced when Harvard Business School chose the MontGras winery as its first 'case study' of a Chilean winery. Rock Climbing Cojitambo

Breathtaking Cojitambo Mountain is one of—if not the—most famous climbing spots near Cuenca. With more than one hundred routes spanning this marvelous volcanic formation, it is a rock climber’s paradise. Cojitambo is one of the hidden gems of Ecuadorian tourism and an absolute must-do, even for complete climbing novices, as our expert will guide you. Cojitambo also offers spectacular views of Inca ruins and rolling valleys from the uppermost point. The top of the ruins provides remarkable views of the cities of Cuenca, Biblian, and Azogues.

Hot Air Balloon Ride

The experience begins at sunrise. As we arrive at the departure zone, the pilot and crew will welcome us and continue working on assembling the balloon. A feeling of adventure starts to build up as the balloon stands, eager to fly. We will board the balloon and enjoy a soft takeoff, which will officiate the beginning of our adventure! It is considered an adventure as the flight depends on the weather and wind, making each flight a unique experience. Once we are up in the air, we will have the opportunity to appreciate the valley from a unique perspective among the clouds in the sky. As we descend, the pilot will give us a short briefing to better appreciate this thrilling moment. After landing, we will continue a tradition that began with the first hot air balloon flight, a toast! We will enjoy a local sparkling wine with a traditional countryside hors d'oeuvres.

Horseback Riding - Bellavista Equestrian Center

Whether you are a horse-lover or simply enjoy an occasional ride, you will be welcomed at our equestrian center, located a mere twenty minutes from Cuenca. Our expert guide will find a horse to meet your expectations and level of expertise, and after you are equipped with all of the basics in the stables, you will embark on a journey overlooking the valley of Tarqui. Viu Manent Winery and Pilar Rodriguez: Foor & Wine Studio

Once in Viu Manent Winery, we will board a horse-drawn carriage that will take us through an extensive tour where we will learn about the winery's history and the different variety of grapes, as well as visit the wineries, cellar and visitor's center. The tour will conclude with an extraordinary wine tasting session with the bets wines Viu Manent has to offer. Lunch will be at the recognised Rayuela Wine and Grill Restaurant. We will take a short drive to Pilar Rodriguez’ Studio. Pilar's culinary experience is rooted in her education at Le Cordon Bleu (Paris), her stay in the USA, Panama and France, and her experience with renown chefs. Thus, her knowledge and empathy with different cultures is clearly reflected on her gastronomic creations. Mountain Biking

Cuenca’s location in the Andean valley provides great opportunities for cycling tours of the city and its surroundings. The geography of the Cuenca area, as well as its cultural and natural diversity, creates picturesque and interesting rides through scenic mountain paths. Pedal across fields of corn, fruits, and wheat, and next to ancient houses still bustling with the life of the friendly locals. Pablo Neruda's Isla Negra

The drive to Isla Negra is very scenic, as there are many small charming settlements along the central coast of Chile, making it a very enjoyable drive. There will be plenty opportunities to capture Chile’s beauty along the way. Once in Isla Negra, we will visit the house of Pablo Neruda, the most famous Chilean poet. His house is currently a museum where you can enjoy the same place were this eccentric poet got inspiration for his most romantic expressions. Isla Negra is also home of many Chilean Artists that perform their art in shops to the street. In the same venue as the Museum there is La Casa del Poeta, famous for its eel soup “caldillo de congrio” and the Ode to Seafood “Guachinangito”.

Hiking Cloud Forest - Cajas National Park Tushipungo

The pretty Tushipungo Valley sets the scene for this hike as you meander through cattle farms until your arrival at the spectacular ‘El Cajas National Park’, a stretch of protected land extending for 71,000 acres and home to an incredible 230 glacial lakes. The history behind the ‘U’ shape of the lake, the lowest elevation in El Cajas National Park, is due to prehistoric glacial activity. Here, you will traverse rolling paramo grasslands, along rippling brooks and lakes, and through fields of wild quinoa and rosemary. Be sure to pack your binoculars to capture the abundance of birds and mammals such as the Andean fox, whitetail deer, and spectacled bear, with trout plentiful in several of the moorland’s lakes. This location is perfect for excellent nature watching.

Casablanca Valley: Viña Casa Emiliana and/or Bodegas RE

Viña Casa Emiliana is located in the Casablanca Valley, which is between Santiago and the city of Valparaíso. We will take a private and privileged tour of the gardens, vineyards and cellars of Viña Casa Emiliana where you will learn how the terrain and climatic characteristics of this region produce organic wines of great distinction. Bodegas RE is a small family owned vineyard that, for nine generations, has been using clay pots to produce wines of great distinction. These ancient techniques are explored during this fascinating tour which shows how ancient and modern techniques are used to ferment and blend a range of unique and complex wines.

Ingapirca Ruins

In relative close proximity to Cuenca are the Ingapirca Ruins, the largest known Inca ruins in all of Ecuador. Characterized by their carefully chiseled stones, which fit together perfectly, and have remained intact since the eighteenth century, the ruins represent the success of the Incas in uniting varying cultural groups under one authority. Cemeteries, observatories, roads, storage rooms, priest chambers, a plaza, and an underground water duct system have all been discovered at this site, but undoubtedly, the most impressive structure is the elliptical ‘Temple of the Sun’—a significant ceremonial and ritual spot for the Inca-Cañari, who worshipped the sun and moon. This temple is positioned perfectly so that on the solstices, the sun passes directly through the center of the doorway at the top of the temple.

Valparaiso City Tour and Chilean Cooking Class

Hiking Cloud Forest - Tolapaloma-Quebrada El Salado

This hike begins only ten miles from Cuenca and will transport you into an ancient forest and valleys formed by the Andes Cordillera, where you will find orchids, epiphytes, polilepys trees, and a wide variety of hummingbirds. Pause to appreciate the rolling hills and dramatic canyons that descend from this important forest. After six miles of moderate trekking, you can relax and treat your muscles to the volcanic hot springs that await you at the trail’s end.

La Campana National Park

La Campana National Park is located in the mountains of Chile’s Central Valley and offers incredible views of both the Andes and the Pacific Ocean. Our hike follows the route taken by Charles Darwin’s during his famous visits to Chile and we encounter the same extraordinary flora and fauna, including Chilean Palms, once considered extinct, eagles, hummingbirds and maybe even some mountain cats and foxes. After our day’s hike, we will head on to Santiago, Chile’s capital and largest city which is surrounded by the snow-capped Andes to the east and the Pacific Ocean to the west. The heart of this stunning city is the old colonial core, home to many landmark buildings and a bohemian nightlife.

Río Clarillo and Visit the Agro-Ecological School of Pirque

This is an adventurous hike through the spectacular Rio Clarillo Reserve in the pre-Andean mountain range of Chile's central zone, at the heart of which is the fast flowing Rio Clarillo. We then visit the Agro-Ecological School of Pirque, founded in 1991 as a highly sustainable educational project where troubled teenagers acquire agriculture, farming or veterinary skills. If needed, overnight accommodation is provided in a nearby lodge developed by the ‘Fundacion Origen’, a non-profit institution which promotes sustainable development.

Timeless Santiago

This guided tour of Santiago's historic centre takes in the vibrant Paris–Londres district, the historic Casa de la Moneda, the spectacular Santa Lucia and the Mercado Central Market, working up a good appetite before a traditional seafood lunch with local wines.
